179. Irish Hot Chocolate

Ingredients

1/2 cup unsweetened cocoa powder

1/3 cup sugar

1 teaspoon vanilla

1/2 cup cold water

2 1/4 cups milk

3/4 cup half-and-half

1/2 cup Baileys Original Irish Cream liqueur, or to taste

Whipped cream and shaved bittersweet chocolate for garnish

Direction

Heat pinch of salt, water, vanilla, sugar and cocoa powder in a big heavy saucepan on low heat, whisking, till it is a smooth paste and cocoa powder dissolve. Add half and half and milk, both scalded, slowly; simmer hot chocolate for 2 minutes, whisking. Mix in Baileys. Blend hot chocolate in batches in a blender for frothier results. Divide hot chocolate to mugs; top with whipped cream and chocolate.
